ZAVINO WINE BAR PIZZERIA I should just tell you it get's the highest rating 8 slices out of 8 and just go and experience this incredible pizzeria but I must tell you more.

This is just perfect authentic pizza in the Neapolitan tradition. In italy when you order pizza at a restaurant you get your own pizza as you do here. It's much smaller than the American counter part. Italian pizza is  the size of the plate.  This pizza is not to be confused with Pizza al Taglio, Italian Pizza by the slice sold to go.


Let's first "see" why this pizza is so incredible.


Look at this picture and notice the black bubble spots. Great pizza is cooked quickly at very high heat. As the dough bubbles it also burns the crust at the top of the bubbles. YOU WANT THIS. ITS DELICIOUS! It will not taste burnt because the dough is so thin at the top of the dough bubble. It just adds another demention to the great taste. This is the first sign that your in for a great experience.


You can tell this is  fresh mozzarella. It's white and cut into whole pieces. Probably "mozzarella di buffa" made from the milk of the domestic water buffalo rather than from cow's milk. Notice where the sauce is separated as the dough bubbled up to the burnt top. (remember burnt is good!!!!!) 


Pictured below is the polpettini (Little Meat Balls). The Polpettini here is made of fresh veal. They were soft in texture and absolutely perfect. (Nothing worst than real dense beef meat balls.) These were true master pieces.





The bottom was cooked perfectly and you can see it was a hot oven. There was a dusting of flour on the bottom.




This is an extraordinary pizzeria and you'd be crazy not to try it.

Ok let's talk taste. Wow.

Dough.

Bread like. Not sweet at all. (Pizza dough should never be sweet) Crispy on the outside and doughy on the inside. Since the pizza is thin the contrast between crispy and doughy is just perfect. You crunch into first bite and it's chewy the rest of the way.

Sauce.

Tangy, sparingly placed. The last thing you want is too much of any one ingredient. For example, you'll never find extra cheese on pizza in italy. All you need is fresh ingredients sparingly placed and all the flavors have a chance to burst in your mouth.

Cheese

Fresh Mozzarella and Provolone on specific custom pies. "FRESH" says it all.

Basil.

If I need to explain you need to watch the food channel.

The owner STEVE GONZALEZ was really down to earth and as you can imagine was engaging to talk pizza. Best of luck Steve!

I really can't say enough great things about this pizza it's just perfect and Philly is very lucky to be it's new home.
