"GRANDMA PIE"
It crunches with each bite! I believe he uses double zero flour as a base but adds additional flours to give this crust a bread like consistency. OMG it's great. It's cooked in a pan just like Nonna (Grandmom) used to make. Second he uses san marzano tomatoes which is the only kind you ever want to use with pizza. Now very important look at the peperoni, notice how it curves up that is always the sign of quality pepperoni. The worst is when you get flat pepperoni and it bleeds oil all over the pizza.
Lastly Alex cooks this AMAZING creation in a wood burning very hot oven. Infact if you're lucky enough to experience this pie surely you speak with Alex and then he can tell you the story how he and he grandfather in Brooklyn used to but heads about the temperature of the pizza oven. Now for the kicker, this future superstar is only 23 years old! In those 23 years he has been raised since day one in the restaurant and pizzeria business. I'm telling you this is pizza perfection IF you can get Alex to make you one!
The next day cold test! Delicious!! Past with flying colors of the Italian flag!
